| Water | 2 cups |
| Roma tomatoes | 10+ (finely chopped) |
| Parsley | ¾ cup (finely chopped) |
| Mint | ¾ cup (finely chopped) |
| Spring onions | 4 (finely chopped) |
| Lemon juice | 2 tbsp. |
| Olive oil | 1 tbsp. |
| Ground pepper | 1 tsp. |
Preparation

Rinse the quinoa under cold water. Bring two cups of water to a boil, add the quinoa, and simmer for 15 minutes until tender. Let cool.

In a large bowl, combine the cooled quinoa, finely chopped Roma tomatoes, parsley, mint, spring onions, lemon juice, olive oil, and ground pepper. Mix well.

Serve chilled or at room temperature.
