Tabouli with Quinoa – a refreshing Middle Eastern dish, perfect for gatherings and packed with vibrant flavors.

Water2 cups
Roma tomatoes10+ (finely chopped)
Parsley¾ cup (finely chopped)
Mint¾ cup (finely chopped)
Spring onions4 (finely chopped)
Lemon juice2 tbsp.
Olive oil1 tbsp.
Ground pepper1 tsp.

Preparation

  1. Rinse the quinoa under cold water. Bring two cups of water to a boil, add the quinoa, and simmer for 15 minutes until tender. Let cool.

  2. In a large bowl, combine the cooled quinoa, finely chopped Roma tomatoes, parsley, mint, spring onions, lemon juice, olive oil, and ground pepper. Mix well.

  3. Serve chilled or at room temperature.
